Super-Duper Easy Doughnuts

I am ecstatic to share this with you...
In fact, soooo excited I HAD to go ahead
and take pictures of them tonight!!
So, yes I used the flash {I know, that's a no - no!!}

I got brave tonight.
Researched a recipe...
warmed up my deep fryer...
and made zeppole dough.

After about 3 batches, I was ready to throw in the towel!!

But, then I had an idea!!
** ding, ding, ding **
And, I bet you have a can in your fridge right now!!!
Yes, I'm talking about Pilsbury Cinnamon Buns!

Source

This is so ridiculously easy, I'm kicking myself for not thinking about this before now!

1 can of Refrigerated Cinnamon Buns
Oil for frying
1/2 cup Sugar
2 tablespoons Cinnamon

Preheat oil to 350 degrees. While that's heating, place the sugar and cinnamon in a bowl and mix together. Set aside. Now, pop open the can of dough and cut each round into two or four. {depending on how big you want your doughnuts - remember, they will double in size} With your hands, form each piece into a circle and carefully place the dough into the grease - one at a time. Cook on each side for about 3-4 minutes until golden brown.

With a slotted spoon, removed done doughnuts and immediately place in cinnamon-sugar. Roll it around until completely coated.

And, TAAAAH DAAAAAAH!!!

Hot, chewy, fried doughnuts straight from YOUR kitchen!

**Yummy tip: Don't throw out the frosting from your cinnamon bun can - it makes a great dipping sauce for your doughnuts!!**

These are so good!! You and your family will love 'em!

Please have a wonderful holiday weekend! We are going to enjoy lots of relaxing family time ... that, and doughnuts!  ;)

May 15th, 2011

Yesterday was gorgeous here in South Carolina!
The sun was shining ... and the breeze kept the temperature cool.
It was the perfect day for a wedding!

I traveled to Mount Pleasant with hundreds of mini cupcakes, dozens of standard cupcakes and 2 jumbo cupcakes in tow for a bright, fun and unique wedding.

My cute-as-a-button couple wanted a Wedding Cupcake Tower unlike any other ... "where each flavor had his own little personality," the bride told me at our first meeting.

Here is what I created for her:

They chose 5 different flavors to adorn their tower, including Red Velvet, Chocolate Butterscotch, Italian Cream, Lemon Raspberry and Chocolate Mint.

The topper Jumbo Cupcake was Red Velvet in flavor and decorated with Cream Cheese Roses, Silver Pearls and a coupling of flowers. The "Cutting Cake" in the background was also a Jumbo Cupcake in the Chocolate Mint Flavor.

To bring in their wedding colors, I wrapped the stand's posts with orange and pink tulle. I think it added to the right amount of color to the display!

I had the fantastic surprise of talking with and showing the bride and her mom the display before leaving the reception hall - and they were absolutely in love with it!

A big THANK YOU to the new couple for inviting me in on your big day! It was a blast creating this display! Congrats again to you both!

A Beach Life Cupcake Tower

Mother's Day weekend, I had the wonderful luck of being apart of a super fun couple's wedding!

Although from inland South Carolina, they opted to traveled my way for a beautiful beach ceremony and reception.

Of course, the inspiration behind this Cupcake Tower was the sea...but, her wedding dress also played a major role. It was actually the bride's idea to combine both sea shells and roses and I must admit, it turned out just lovely!

I found the best way to create a display that flows would be to do the whole thing in ivory with just simple splashes of the wedding color. {A bright coral hue}

Here's is the end result:
{Unfortunately, I walked right out the door without my camera, so these are shots I borrowed from Facebook.}

The Topper Cake was alternating Red Velvet and Lemon Raspberry flavors covered in Ivory Buttercream and accented with a Coral Fondant Rose.

The couple chose 6 flavors to adorn their display, including Red Velvet, Lemon Raspberry, White Chocolate Caramel, Chocolate Hazelnut, Vanilla Bean and Strawberry Shortcake. I topped half the cupcakes with White Chocolate Sea Shells and the other half with Ivory Icing Roses.

For a little added pop of color, I wrapped the cupcake stand's  posts with peach and hot pink tulle.

This is what my fabulous bride wrote in a note to me via facebook:
 Hey I just wanted to thank you for the BEAUTIFUL job you did with cake and cupcake tower. It was more perfect than I could have ever imagined...and it tasted awesome, too. Thanks so much for helping make my day special!
You are MORE than welcome, Catherine! It was a beautiful wedding for a beautiful bride! Congrats to you both!

Nutella Pinwheels

Hey Y'all!
This is a quick
and EASY recipe
for those nights when you're too tired to bake,
but are craving something sweet!

The looong ingredient list:

Prepared Puff Pastry
1/2 cup Nutella
Sugar for Sprinkling
Chopped Hazelnuts {totally optional}

Preheat oven to 400 degrees. Thaw Puff Pastry and place on a floured cutting board. With a rolling pin, roll the pastry out slightly starting in the center and going to the edges.

Spread Nutella over pastry making sure to go all the way to the edges and sprinkle with the chopped hazelnuts.

Roll pastry over itself until a log is formed and trim each end.

Make your slices every half inch and place each cookie on a greased sheet pan. Bake for...

Opps...I completely forgot! I had to pull these right back out of the oven to sprinkle the top of each cookie with a little sugar for extra crunch! It's a must, I promise!

Okay, now bake for 14-16 minutes, or until the cookies have doubled in size and the edges are brown. Let cool and enjoy!

These dainty little morsels of goodness are nutty, chocolatey, chewy, crunchy and fabulous all at the same time!  ;)  Just be sure not to over bake - every oven is a little different, so keep an eye on them. These are perfect when still a little chewy in the center!

But, the BEST PART is how incredible simple they are to make! I bet you have the ingredients in your kitchen right now...doncha!?
