Pirate Birthday Cupcake Tower

The cutest lil' matey on the 
beach turned 5 yesterday, and 
I was invited to be apart of the celebrations!


Arrrgh!!


This is a Chocolate Fudge Cake and Vanilla Buttercream Frosting with Marshmallow Fondant details. And, yes ... that is a sword through the cake!


The 4 flavors chosen for Cade's cupcakes were Plain Jane, Cookies and Cream, Unbirthday Cake and Double Chocolate. Each cupcake was sitting in a handmade Cupcake Wrapper with matching Ship's Sail Pick.


The birthday boy was as
cute as a button ...
and so was his Pirate themed party!

Vegas Themed Wedding

Orange-Chocolate Cupcakes

Do y'all watch Cupcake Wars?
I just recently got into the show
and now DVR every episode 
so I don't miss a one!

I just LOVE all the ideas
and cutting edge flavors
that are discovered through 
the pressure to impress.

About 2 weeks ago
there was a contestant who 
used a hallowed out orange
as the cupcake liner ...

GENIUS, right!?!

Needless to say,
that got my juices flowing!
Here's my take:


Ingredients for Six Cakes
{adapted from Stefani Pollack of Cupcake Project}
Cupcakes:
3 Oranges
1/4 cup Flour
1/4 cup Brown Sugar
1/4 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Instant Coffee or Espresso
1/4 tsp Vanilla Extract
2/3 cup Dark Cocoa Powder
2/3 cup Orange Juice
3 tbsp. Butter, melted
1 egg
1/4 cup Dark Chocolate, roughly chopped
Zest of 1/2 Orange

Method
Preheat oven to 350 degrees.
Cut each orange in half and juice, reserving for later.


Hallow out the inside. Turn each half on it's side and slightly trim the bottom, giving it a flat surface to sit upon. Set aside.


In a small bowl, whisk all ingredients together until combined. Fill each half orange with batter, being sure not to over fill.

{ FYI: This is over-filled ... lol, made quite a mess! ;) }

Place each half orange on a baking sheet and bake for 18-20 minutes, or until a toothpick comes out clean when tested in cake. Let cool.

Nutella Ganache
1/4 cup Nutella
1/4 cup Dark Chocolate, roughly chopped
In a microwave safe bowl, place ingredients in the microwave and cook for 30 seconds. Remove and stir. Cook for 30 more seconds and stir again. It should be a great ganache consistency.
Dip cooled cupcakes into ganache.

Candied Orange Butterflies
If you would like to make these super cute and yummy little butterflies, I followed THIS recipe from foodnetwork.com.
Top each cupcake with a butterfly and serve with a spoon!


I don't even have words
to describe how
flippin' fantastic 
these little guys are!


The cake is
moist,
rich and
chocolaty ...

the ganache is
creamy,
smooth and
nutty ...

and the orange flavor
seeps into the cake
to flavor each bite 

perfectly!


{Oh, did I forget the butterfly? It adds wonderful flavor and crunch!}

Apple Pie Cupcakes

Mason is on this apple kick.
Like, two apples a day kind of kick.
And his interest has peaked mine
to re-think Apple Cupcakes.

There are so many different recipes
out there in bloggy world ... 
my biggest challenge was 
creating something unique.

My favorite part of 
a pie is the crust!
So, I wanted there to be a little
in each bite.

This, my friends, is how they turned out:


Warm spice cake with pie crust bits baked in and a cinnamon-apple filling. The cupcake is topped with crunchy pie crust bits and vanilla spice cream cheese frosting "ice cream."


This cupcake
BURSTS
with american apple pie flavor
and is cute-as-a-button to boot!

Ingredients
Refrigerated Pie Crust
2 tbsp. White Sugar
1/2 tsp. Cinnamon

2 Green Apples, peeled and chopped
1/2 cup White Raisins or Dried Cranberries {optional}
3 tbsp. Butter
1/2 cup Brown Sugar
Juice from 1 Lemon
1/2 tsp. Apple Pie Spice
1/8 tsp. Salt
1 tsp. Vanilla Extract
1 tbsp. Cornstarch mixed with 2 tbsp. Water

2 1/2 cup Flour
2 tsp. Baking Powder
2 tsp. Cinnamon
1 tsp. Ground Ginger
1/4 tsp. Nutmeg
1/4 tsp. Allspice
1/4 tsp. Salt
1 stick Butter, room temp.
1 1/4 cups of Light Brown Sugar, packed
3 Large Eggs
1 1/4 cup Buttermilk
1 Vanilla Bean, split to expose insides

Method
Preheat oven to 350 degrees.
Mix the sugar and cinnamon in a small bowl. Break pieces of the pie crust off and roll in the cinnamon-sugar mixture. Bake for 8 minutes, or until golden. Set aside.


Melt butter in a skillet over medium heat. Add apples {and raisins, if using} and cook for 1 minute. Add sugar, lemon juice and seasonings and coat apples.  Let apples cook on low until tender - add cornstarch/water mixture and stir in immediately. When thickened, pull off of heat and set aside to cool.

Combine dry ingredients in a bowl for the cupcakes and set aside. Cream butter and sugar with the paddle attachment of a stand mixer until light and fluffy - add eggs one at the time until combined. Alternating the dry ingredients with the buttermilk, slowly add both to egg mixture. Once the batter forms, add the insides of the split vanilla bean and the baked pie crust pieces. Spoon batter into muffin cups, 1/2-3/4 full. Dollop a tbsp. amount of pie filling in the center of each. Bake for 16-18 minutes, or until the cake has set. Let cool on a wire rack.


To finish, I dolloped a "scoop" of my favorite vanilla cream cheese frosting with a dusting of cinnamon on top and more crumbled pie crust. This recipe makes 24 mini cakes.

These are truly an Apple Pie
in CUPCAKE form!
Mmm, mmm! 


The cake is super spicy.
The filling is sticky and juicy.
The frosting is light and sweet.
And, the pie crust gives the cupcakes a perfect crunch.

New Button!

It's raining!!

Exciting *NEW* Cupcake

One of my most popular cupcake flavors is Red Velvet. The mixture of buttermilk, cocoa and cream cheese frosting is beyond perfection to so many people!


Red Velvet has one problem amongst recent clients, though...

...it's RED!

There are growing numbers when it comes to baking {and eating} as natural as possible, so adding THAT MUCH food coloring to a product is starting to turn a few off. Not to mention, the color red just doesn't fit in to all weddings!

Well, my dears - I have a solution!



These luscious confections are a super light buttermilk cake {with or without} fresh raspberries baked in and topped with a smooth almond cream cheese frosting & a mini amaretto cookie. 


With this cupcake, you still get an outrageously moist buttermilk cake with everyone's favorite southern cream cheese frosting - only without all the extra dye. White Velvet is the perfect alternative and addition to any cupcake tower!

It's a Princess Party!

A very sweet, super cute little princess turned 5 today!
And, of course celebrated in style!


I was lucky enough to be apart it - providing cake, cupcakes and cookie pops.


The Topper Cake


A fresh banana cake filled with vanilla cream cheese and iced in powder pink buttercream. A
marshmallow fondant crown adorns the outside of it. The topper is Miss Princess' vintage tea
cup with a fresh banana cupcake sitting inside.

The birthday girl was not the only one who had her own tea cup...in fact, each guest received one with their very own cupcake inside. {The vintage tea cups were part of the favors - too cute!}


Princess Wands


These little confections are sugar cookie pops with marshmallow fondant decoration and pearl
dust for shimmer. {Also apart of the favors!}



I had a blast putting these princess treats together! A perfect way to start the weekend, for sure!

2011 Cupcake Menu



I've built my company, Sweet Street Designer Cakes and Cupcakes, on the belief that everyone deserves a "moment" now and then...and Gourmet Cupcakes are perfect for that! That's why I've put so much time in compiling the ultimate cupcake menu. I use the freshest ingredients found in the area, including whole milk and cream, real butter and vanilla, as well as ripe fruit, Ghirardelli chocolate and imported coffee. Each cupcake is made especially for you and your event and can be customized to fit any theme (including flavor.) My gourmet cupcakes are sold by the dozen with the option of two flavors per dozen.

Cotton Candy-
Vanilla bean cake with a tart berry filling and topped with cotton candy infused blue and pink swirled
buttercream.
Fortune Cookie-
Vanilla bean cake filled with lemon curd and topped with vanilla buttercream, dried fruit bits and a written fortune.
Hot Fudge Sundae-
Vanilla Bean cake filled with marshmallow cream and topped with chocolate ganache and toasted walnuts.

Italian Cream-
Coconut and toasted pecan cake topped with cream cheese frosting, toasted coconut and pecans.

Peanut Butter & Jelly-
Vanilla bean cupcake filled with fresh strawberry preserves and topped with peanut butter frosting and a chocolate covered potato chip.

Vanilla bean cake filled with vanilla bean pudding, topped with vanilla buttercream and crushed Nilla Wafers.

Vanilla Bean-
Vanilla bean cupcake topped with smooth vanilla buttercream and brightly colored sugar.

Raspberry White Velvet-
Moist buttermilk cake with fresh raspberries baked in and topped with almond cream cheese frosting.

Chocolate chunk cake topped with vanilla buttercream and a fresh baked chocolate chunk cookie.

Moist chocolate cake filled with marshmallow creme and topped with peanut butter frosting.

Fresh Bosc pear cake with toasted pecans folded in, topped with a tangy blue cheese cream cheese frosting and a balsamic vinegar reduction drizzle.

Eggnog Cupcakes


Tonight after dinner my husband looks over at me with these puppy dog eyes that said, "Pweeese make some dessert!" I have been wanting to try a new holiday recipe for a while, so I hopped up and started my Kitchen Aid...

Eggnog Spiked Cupcakes
These little delights were made with actual eggnog, a splash of dark rum and freshly grated nutmeg. They are topped with an eggnog cream cheese frosting and holiday flair.

I am not a fan of eggnog...the thick, chalky and bitter drink does nothing for my palate. But, my husband LOVES it and this was for him....

I have to admit, though, these cupcakes blew me away! The nutmeg cut the sweetness in the moist cake and the touch of rum made the frosting pop. Eggnog may be my new favorite...just in cupcake form! ;)

Sweet Potato Souffle Cupcake

As far back as I can remember, my favorite part of the holidays was the food...and my favorite part of dinner was Sweet Potato Souffle!
Ever since I started baking, this recipe has been in the back of my mind - I just kept telling myself I'd try it when I had a free day. Well, between orders and just life itself that day never came...until today, that is!


Sweet Potato Souffle Cupcake

This is a super light sweet potato cake with hints of cinnamon and brown sugar topped with a marshmallow meringue toasted under the broiler.

Can I just say "Mmmmmm Mmmm Mmmmmmmm!!!" If you like sweet potatoes, you'll LOVE this cupcake!
